Irish Stew (serves 5) - Ensure TwoCal Neutral
Ingredients:
- 1 pack of Ensure® TwoCal neutral (200ml)
- Beef or lamb (800g)
- Bouquet of parsley, thyme and bayleaf
- 3 large onions, finely chopped
- 3 carrots, chopped
- 1 small turnip, chopped
- 1 leek, chopped
- 10 potatoes (600g)
- Cabbage, shredded (75g)
- Water
- Worcester sauce
- Cut the meat into chunks
- Place the meat, bouquet of herbs, onions, carrots, turnip and leek into a stock pot, cover with water and simmer gently for 1 hour
- Skim off the foam as it rises
- Add the potatoes and continue cooking for 25 minutes
- Add the cabbage for the last 5 minutes
- When the meat and vegetables are cooked, remove the bouquet of herbs
- Stir through Ensure® TwoCal, chopped parsley, dash of Worchester sauce and heat through
- Transfer to a bowl and serve
- Serve with soda bread
