Chicken Pasta (serves 2) – Complan Savoury Chicken

Ingredients:

• 1 can of Ensure^® Plus Savoury chicken (250ml)
• Butter (40g)
• 2 chicken breasts, chopped (240g)
• 1 small onion, diced
• 1 clove of garlic, crushed
• 1 medium red pepper, chopped
• 6 mushrooms, sliced
• 1 tablespoon of cornflour
• Pinch of salt and pepper
• Pasta, cooked (460g)

Method:

• In a large saucepan, melt the butter on a high heat
• Add the chicken, onion and garlic and stir until golden brown
• Reduce to a medium heat and add pepper and mushrooms
• Cook for 10 minutes, stirring occasionally, until the chicken is cooked through
• Remove from the heat and stir in Ensure^® Plus Savoury
• Mix the cornflour with a little water until a paste forms
• Add the cornflour to the saucepan
• Return the saucepan to the heat and warm gently for 5 minutes, stirring regularly, until the mixture thickens
• Add salt and pepper to taste
• Serve with cooked pasta, adding salt and pepper to taste

Serving suggestions:

• Sprinkle with chopped fresh basil or grated parmesan
• Replace Ensure^® Plus Savoury chicken with Ensure^® Plus  Savoury mushroom
