Cinnamon Scented Rice (serves 3) - Ensure TwoCal Vanilla


1 pack of Ensure® TwoCal vanilla (200ml)

2 teaspoons of vegetable oil

White basmati rice (75g)

2 cardamom pods or ¼ teaspoon of ground cardamom

3 whole cloves

1 bay leaf

One cinnamon stick or ¼ teaspoon of ground cinnamon

¼ teaspoon salt

Water (150ml)


1.       Preheat the oven to 180°C / 350°F / Gas Mark 4

2.       In a saucepan, heat the oil over medium heat

3.       Add the rice and cook for 2 minutes, stirring constantly, until the rice is tender

4.       Add the cardamom, cloves, bay leaf, cinnamon stick (broken in ½), salt and continue to stir

5.       Add water and bring to a simmer

6.       Add Ensure® TwoCal and continue to cook until the mixture begins to simmer (do not boil)

7.       Remove from the heat

8.       Pour the mixture into a 8-inch square oven proof dish

9.       Cover the dish tightly with tin foil

10.    Place in the oven and cook for 30 minutes

11.    Check the rice (it may need an additional 5 minutes to absorb all of the liquid)

12.    Remove dish from the oven and allow to stand (covered) for 5 minutes

13.    Remove the cover and fluff the rice with a fork before serving

Serving suggestions:

Serve with chicken or turkey curry
