Berry Fruit Dream (serves 4) – Ensure Plus Fibre Fruits of the Forest

Ingredients:

• 1 pack of Ensure^® Plus Fibre fruits of the forest (200ml)
• 1 pack of strawberry jelly (135g)
• Boiling water (160ml)
• 1 cup of mixed berries

Method:

• In a medium bowl, dissolve the jelly in boiling water
• Allow to cool for 5 minutes but do not allow jelly to set
• Add Ensure^® Plus Fibre and mixed berries, stirring constantly with a fork
• Place the mixture in dishes or moulds and chill for approx 1 hour until set

Serving suggestions:

• Garnish with cream and chopped fruit
