White fish in cheese sauce weaning recipe – Infatrini
Ingredients
- 90g (3 oz) fresh or frozen portion of cod (or another white fish)
- 100ml (31/4 fl oz) Infatrini®
- 5g (1/6 oz) 1 rounded tsp cornflour
- 20g (2/3 oz) 3 heaped tsp mild cheddar – finely grated
Method / Preparation
- Place fish portion (defrost if necessary) in a shallow dish with 20ml (2/3 fl oz) water. Cover and microwave on full power for approximately 2 minutes. Set aside.
- In a 600ml (1 pint jug) cream together cornflour with 20ml (2/3 fl oz) Infatrini® until smooth, then mix in remaining Infatrini®.
- Microwave on full power for 1 minute and stir. Continue to microwave on simmer / low for a further 1 minute.
- Stir in the grated cheese and add juices from fish, if a thinner sauce is required.
- Pour sauce over fish and reheat in microwave on low / simmer for 30 seconds.
- Serve with mashed potato, pasta shapes or boiled rice and a vegetable.
