Cinnamon Scented Rice (serves 3) – Ensure TwoCal Vanilla
Ingredients:
- >1 pack of Ensure® TwoCal vanilla (200ml)
- 2 teaspoons of vegetable oil
- White basmati rice (75g)
- 2 cardamom pods or ¼ teaspoon of ground cardamom
- 3 whole cloves
- 1 bay leaf
- One cinnamon stick or ¼ teaspoon of ground cinnamon
- ¼ teaspoon salt
- Water (150ml)
Method:
- Preheat the oven to 180°C / 350°F / Gas Mark 4
- In a saucepan, heat the oil over medium heat
- Add the rice and cook for 2 minutes, stirring constantly, until the rice is tender
- Add the cardamom, cloves, bay leaf, cinnamon stick (broken in ½), salt and continue to stir
- Add water and bring to a simmer
- Add Ensure® TwoCal and continue to cook until the mixture begins to simmer (do not boil)
- Remove from the heat
- Pour the mixture into a 8-inch square oven proof dish
- Cover the dish tightly with tin foil
- Place in the oven and cook for 30 minutes
- Check the rice (it may need an additional 5 minutes to absorb all of the liquid)
- Remove dish from the oven and allow to stand (covered) for 5 minutes
- Remove the cover and fluff the rice with a fork before serving
Serving suggestions:
- Serve with chicken or turkey curry
