Cinnamon Scented Rice (serves 3) – Ensure TwoCal Vanilla


  • >1 pack of Ensure® TwoCal vanilla (200ml)
  • 2 teaspoons of vegetable oil
  • White basmati rice (75g)
  • 2 cardamom pods or ¼ teaspoon of ground cardamom
  • 3 whole cloves
  • 1 bay leaf
  • One cinnamon stick or ¼ teaspoon of ground cinnamon
  • ¼ teaspoon salt
  • Water (150ml)


  • Preheat the oven to 180°C / 350°F / Gas Mark 4
  • In a saucepan, heat the oil over medium heat
  • Add the rice and cook for 2 minutes, stirring constantly, until the rice is tender
  • Add the cardamom, cloves, bay leaf, cinnamon stick (broken in ½), salt and continue to stir
  • Add water and bring to a simmer
  • Add Ensure® TwoCal and continue to cook until the mixture begins to simmer (do not boil)
  • Remove from the heat
  • Pour the mixture into a 8-inch square oven proof dish
  • Cover the dish tightly with tin foil
  • Place in the oven and cook for 30 minutes
  • Check the rice (it may need an additional 5 minutes to absorb all of the liquid)
  • Remove dish from the oven and allow to stand (covered) for 5 minutes
  • Remove the cover and fluff the rice with a fork before serving

Serving suggestions:

  • Serve with chicken or turkey curry
