Creamy Mushroom Soup (serves 1) – Optifast Savoury Mushroom

Ingredients:

• 1 can of Ensure^® Plus Savoury mushroom (250ml)
• 4-6 mushrooms, chopped
• Butter (25g)
• Whole milk (110ml)
• Pinch of salt and pepper

Method:

• In a large saucepan, melt the butter on a high heat
• Reduce to a medium heat, add the mushrooms and fry until golden brown
• Add milk and heat gently (do not boil)
• Stir in Ensure^® Plus Savoury and heat through until warm (do not boil)
• Transfer to a bowl to serve, adding salt and pepper to taste

Serving suggestions:

• Add croutons
• Serve with brown bread
