Cinnamon Scented Rice (serves 3) - Ensure Plus Fibre Vanilla


1 pack of Ensure® Plus Fibre vanilla (200ml)

2 teaspoons of vegetable oil

White basmati rice (75g)

2 cardamom pods or ¼ teaspoon of ground cardamom

3 whole cloves

1 bay leaf

One cinnamon stick or ¼ teaspoon of ground cinnamon

¼ teaspoon salt

Water (150ml)


Preheat the oven to 180°C / 350°F / Gas Mark 4

In a saucepan, heat the oil over medium heat

Add the rice and cook for 2 minutes, stirring constantly, until the rice is tender

Add the cardamom, cloves, bay leaf, cinnamon stick (broken in ½), salt and continue to stir

Add water and bring to a simmer

Add Ensure® Plus Fibre and continue to cook until the mixture begins to simmer (do not boil)

Remove from the heat

Pour the mixture into an 8-inch square oven proof dish

Cover the dish tightly with tin foil

Place in the oven and cook for 30 minutes

Check the rice (it may need an additional 5 minutes to absorb all of the liquid)

Remove dish from the oven and allow to stand (covered) for 5 minutes

Remove the cover and fluff the rice with a fork before serving

Serving suggestions:

Serve with chicken or turkey curry
