Beef & Guinness Stew (serves 1) – Ensure TwoCal Neutral
Ingredients:
- ½ pack of Ensure® TwoCal neutral (100ml)
- Salt and pepper to season
- 1 tablespoon of flour
- Beef, cubed (800g)
- Butter (25g)
- 1 teaspoon of olive oil
- 1 medium onion, chopped
- 1 clove of garlic, crushed
- 1 large carrot, finely chopped
- 1 celery stalk, diced
- Guinness (250ml)
- 1 beef stock cube dissolved in 250ml of boiling water
- 1 bay leaf
- Fresh thyme
Method:
- Preheat the oven to 170°C / 325°F / Gas Mark 3
- In a medium mixing bowl, add flour, pinch of salt and pepper
- Coat the beef in the flour mixture
- In a large frying pan, melt the butter and oil over a medium heat
- Shake off the excess flour from the beef and add to the frying pan, cook until the beef is browned
- Remove the beef from the frying pan and place in an oven proof dish
- Add onion, garlic, chopped carrot and celery to the frying pan. Cover and cook for 8-10 minutes, stirring occasionally
- Transfer the vegetables to an oven proof dish
- Add Guinness, beef stock, salt and pepper, bay leaf and thyme
- Cover and bake in the oven for 1½-2 hours or until the meat is cooked (stir occasionally adding extra boiling water if more juice is required)
- Remove from the oven and stir through Ensure® TwoCal
- Serve immediately
Serving suggestions:
- Serve with potatoes or fresh, crusty white bread
